Potato is among the widely grown crop of world. It likely that a large portion consumed fresh but majority it processed into various products, starch being predominant one. Starch can greatly contribute to textural properties many foods and used in food industry as raw material. Since potatoes are perishable accessible only for few months year, has rely on stored during off-season. The varieties available region, storage conditions, pre post-storage treatments given tubers, packaging materials used, etc. influencing physical, chemical functional characteristics extracted from it. extraction technology tubers also having significant effect quality starch. knowledge potato affected by varieties, conditions will help ensuring uniform desirable provide information breeding programs developing proper postharvest management practices potatoes.
